Apple Carrot Drink
 1 1/2 lbs. carrots, washed well
1 lb. apples
1-inch piece ginger 
Begin by trimming the ends off the carrots and then cut them into 4-inch pieces that will fit through your juicer. Next, core the apples, discarding the seeds, and cut the apples into pieces that will fit through your juicer. Remove some of the peel from the piece of ginger. Turn on your juicer, and juice in the following order: half of the carrots, the piece of ginger, all of the apple, and then the remaining half of the carrots. This will allow the flavors to blend while juicing.
Yield: 2 Cups


Pink Champagne
 1 1/2 cups ginger ale, chilled
1 1/2 cups club soda, chilled
1 ½ cups white grape juice, chilled
1/4 cup raspberry juice or cranberry juice, chilled

In a glass pitcher, stir together all of the ingredients. Serve immediately in your favorite stemware or over ice.
Yield: 4 Cups


Strawberry Lemonade 
1 pint strawberries
1 3/4 cups unbleached sugar
1 1/2 cups water
3 1/2 cups lemon juice
ice 
In a blender, puree the strawberries until smooth. Pass the pureed strawberries through a sieve to remove the seeds and set aside. In a large pitcher, place the sugar and water, and stir well to dissolve the sugar. Add the lemon juice and strawberry puree to the mixture and stir well to combine. Chill. Serve in ice-filled glasses.
Yield: 2 Quarts


Warm Spiced Cranberry Apple Drink

2 Quarts cranberry juice
2 1/2 cups apple juice
1/3 cup sugar
2 - 3-inch cinnamon sticks
1 tsp. allspice
1 orange, sliced
8-10 whole cloves 
In a large pot, combine the cranberry juice, apple juice, sugar, cinnamon sticks, and allspice, and bring to a boil. Reduce heat and simmer for 10 minutes. Stud the slices of orange with the whole cloves and set aside. Strain the juice to remove the spices. Transfer it to a punch bowl, garnish it with the orange slices, and serve warm.
Yield: 10 1/2 cup servings

Strawberry Banana Smoothie
 1 cup apple juice
2 dates, pitted
1 cup strawberries, fresh or frozen
1 banana, peeled, and broken into 2-inch pieces 
Blend the apple juice and dates for1 minute. Add the remaining ingredients and blend an additional 1-2 minutes or until smooth and creamy.  Serve.
*Variation: substitute other fruit or berries in the recipe, as desired.
Yield: 2 Cups

 

Banana Chocolate Shake
 4 cups frozen bananas, cut into 2-inch chunks
1 cup soy milk
3 Tbsp. carob powder
2 Tbsp. maple syrup
1 Tbsp. vanilla 
Remove the frozen banana chunks from the freezer and allow them to thaw for 5-10 minutes to soften slightly. Blend all ingredients for 2-3 minutes or until smooth. Serve immediately.
*Variation: add additional soy milk if you desire a thinner shake, or add almond or peppermint extract to vary the flavor, or add a little nut butter of choice for added flavor and creaminess.
Yield: 4 Cups

 

Orange Spice Apple Cider
 2 Quarts apple cider
1/2 cup sugar
1/2 cup orange juice
2 cinnamon sticks
1 tsp. whole allspice
1 tsp. whole cloves
1 tsp. nutmeg

In a large pot, combine all of the ingredients, and simmer over medium heat for 10 minutes to blend the flavors. Strain the hot cider mixture and serve warm.
Yield: 8 1/2 cup servings
